To make rosé, the dark purple Syrah, Cabernet Sauvignon, and Chambourcin
grapes were pressed into juice just prior to fermentation. This is the same way we process our white grapes – by separating the juice from skins prior to fermentation. The resulting rosé juice was transferred to stainless steel
tanks and fermented without the skins at 58F until dry. Fermenting at cold temperatures enhances natural aromas and flavors. The cork used to seal the bottles is known as a “technical cork” because it is a technically “perfect” cork made from natural cork oak, but without the flaws that most natural corks have.
Great picnic wine, pairs well with burgers, chicken salad and mild cheeses.
