We pick the grapes at slightly lower sugar and higher acid to preserve the natural fruitiness of the grapes. The grapes are cold soaked for minimal time to enhance the color before fermented at a cool 55F in 100% stainless steel tanks. Concord concentrate was added to enhance the fruit for long lasting flavor on the palate. This wine was made like a rosé but with much more residual sugar and color.
Summertime/picnic wine, goes well with fruit salad, picnic foods and spicy dishes.
