Aromas of cherry cola, mulling spices and brown sugar are followed by flavors of chocolate covered cherries, rum raisins and cappuccino cake.
Encore is made from our Chambourcin grapes. About halfway through fermentation, we add grape brandy (about 80% alcohol) to the fermenting must (crushed grapes). This raises the alcohol percentage to about 19% and stops the fermentation, leaving residual sugar. The resulting "fortified" must is pressed to remove skins and seeds, then settled and racked into American oak barrels for aging. Because it's not a tannic wine, its style is more like "Ruby" Port than "Vintage" Port.
In celebration of our 10th Anniversary, we blended barrels from six vintages of Encore (2010-2015) to create a velvety smooth multi-vintage dessert wine that captures the essence of our history: delicious, beautiful and long lasting.
Can be enjoyed on it's own or paired with blue cheeses (like Stilton), crème brûlée, and chocolate desserts.
